How it's made
Super Tuscan is a style, not an appellation. It began when Tuscan growers started blending native Sangiovese with French varieties and aging in French oak — the approach behind Sassicaia and Tignanello. Scaranto builds this Special Edition on the same idea.
The grapes are hand-harvested, then partially dried before fermentation using the appassimento method. Drying concentrates sugar and flavor in the berry, which is where the depth of color, the density of fruit and that velvety mouthfeel come from. The wine is then aged three months in French oak, which knits the fruit together and adds the cocoa and tobacco notes on the finish.
